This easy 3 ingredient potato soup is creamy, cozy, and made right in the slow cooker! Just potatoes, broth, and a simple seasoning blend. Top with bacon and cheese for the ultimate comfort meal.

Ingredients

  • 3 pounds diced potatoes 1/2" cubed pieces
  • 6 cups chicken broth (reserve 1 cup)

Potato Soup Mix Recipe (Seasoning Blend)

  • 6 tablespoons corn starch
  • 1/4 teaspoon cajun seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt

Instructions

  • Dice the Potatoes
    Start by dicing 3 pounds of potatoes into ½-inch cubes. Add them directly to the bowl of your slow cooker.
  • Add the Chicken Broth
    Pour in 5 cups of the chicken broth over the potatoes. Set aside the remaining 1 cup of broth for later.
  • Slow Cook It
    Cover and cook the potatoes:
    On LOW for 7½ hours
    Or on HIGH for 3½ hours. Let the potatoes get perfectly soft and tender.
  • Mix the Seasoning Blend
    In a small bowl, whisk together the Potato Soup Mix Seasoning Blend:
    6 tablespoons cornstarch
    ¼ teaspoon Cajun seasoning
    1 teaspoon onion powder
    1 teaspoon garlic powder
    ½ teaspoon black pepper
    ½ teaspoon salt
    Whisk this seasoning blend into the reserved 1 cup of chicken broth until smooth and lump-free.
  • Thicken the Soup
    Pour the seasoned broth mixture into the hot soup while stirring. Cover and cook for an additional 30 minutes. This thickens the soup and brings everything together.
  • Blend or Leave Chunky
    For a silky texture, use an immersion blender right in the slow cooker to blend the soup to your desired consistency. Or leave it chunky for those dreamy, soft bites of potato.
